INGREDIENTS
-1 lb chicken thighs
-1/4 cup olive oil
-1/3 cup soy sauce (can substitute balsamic vinegar)
-1/4 cup honey
-1 teaspoon minced garlic
- salt and pepper to taste
- 1 red pepper
- 1 yellow pepper
- 2 small zucchini
- 1 red onion
INSTRUCTIONS
- Place the olive oil, soy sauce, honey garlic, salt, and pepper in a large bowl and whisk to combine.
- Add the chicken and vegetables to the bowl and toss to marinade.
- Cover and refrigerate for at least 1 hour or up to 8 hours.
- Soak wooden skewers in water for at least 30 minutes.
- Preheat grill to medium heat, thread meat and veggies on skewers, and grill for 5-7 minutes or until chicken reaches 165 degrees.
